candy bars!

My mom was kind enough to buy me this pan a little while back.  I had been looking for a twinkie pan, but today we used it for homemade candy bars.  All you need is enjoy life chocolates and whatever add in's you want.  I stirred the enjoy life not nuts in mine and it was delicious.  My daughter went with the brown rice crispies.  One more option is mini marshmallows.  I put the chocolate chips into a microwave safe bowl and nuked them for a minute.  Stir like crazy, so the rest of the chips melt, then add in whatever sounds good to you.  I only filled the slots 1/4 of the way full and then put them in the fridge to harden.

Oh my gosh! I'm sorry.  I totally forgot about the blog for like a week.  Truth be told, I've been reading. Sometimes I get caught up in books ( I have read 4 this week) and forget about the rest of the world.  I did make no bake cookies this weekend but didn't take any pictures.

Growing up we had corn flake cookies, but I changed the recipe up by using oatmeal and WOW Butter.  You can get it at Walmart.  I'm sure you can use sunbutter or whatever if you want too.

1 c. corn syrup
1 c. sugar
1 c. WOW Butter
6 c. ? Quick cooking oats

In a pan on the stove put the corn syrup and sugar in the pan and heat it, stirring often, until it comes to a boil.  Mix in the WOW Butter, and stir until it's melted.  Take the pan off the heat and pour in the oatmeal.  I put 6 cups, but that's just a guesstimate.  I started with half that and then just keep adding more in until there is no more gooey stuff left on the bottom.  Now, spoon it into little piles on aluminum foil and wait for them to cool.  It was pretty good, but I think next time I'm going to melt some enjoy life chocolates and drizzle it over the top.
