Cinnabun Cake

So I've been wasting a lot of time on pinterest while my foot is up and I found a recipe for Cinnabun Cake and it is a pretty good coffee cake.  The link to the original is here.

Cinnabun Cake
3c. flour
1c. sugar
4 tsp. baking powder
1 1/2 c. milk replament (soy, rice, whatever)
2 Tbsp. ground flax mixed with 6 Tbsp. water ( or 2 eggs worth of replacer)
2 tsp. vanilla
1 stick of margarine (blue bonnet light or earth balance

for the filling
2 sticks margarine, softened (not melted)
1 c. brown sugar
2 Tbsp. flour
2 Tbsp. cinnamon

Glaze


2 c. powdered sugar
5 Tbsp. milk replacement
1 tsp. vanilla


Preheat your oven to 350*F and grease and flour a 9x13 pan.  Combine the flour, sugar, and baking powder in a bowl.  Stir in the vanilla, and the milk and egg replacements.  Finally stir in the melted margarine.  Next up, combine all the ingredients for the filling, then plop spoonfuls into the filling and swirl it around with a butter knife.  Bake for about 25  minutes.  Once the cake has cooled mix the glaze ingredients and spread it evenly over the top of the cake.  



See my cake really was ugly, but it sure tasted good.  You will want to eat this cake within a couple days or it will start to dry out.  Happy eating!
